Wine Folly: Page 165 of the Wine Folly book breaks down the flavor profile of the Sauvignon Blanc wine variety. It is noted on that page that this wine is typically acidic and derived from flavors from compounds also found in Bell peppers. Paring recommendations for this wine include salty cheeses, light meats, and Asian foods. The flavor notes are gooseberry, honeydew, grapefruit, white peach, and passion fruit. On the next page, some interesting additional tasting notes were grass, jalapeno, cat pee, and chalk. 

My Review: From smelling the glass post-swirl, this wine has a fruity aroma with hints of apple and grapefruit. It wasn't until I took a sip that a subtle peach flavor came out to me. After tasting this wine, I made a sour face, which indicated it was acidic and tart. The liquid itself was very light and smooth with a low viscosity. The flavors also did not linger in my mouth for too long, which proved it was not a dry wine (little to no tannins). This wine would pair best with ham, bread, and salad. Overall, I enjoyed trying a wine from a new region, though I will probably continue exploring other areas of this variety.
